Bunny Cake

My grand daughter and I decided to do a simple Bunny Cake.  These are so easy and loads of fun.  You can decorate them with just about anything you want to use.  We kept it simple.

 
You will need:
1 box of cake mix (any kind you like)
eggs & oil to make the cake
1-14oz bag of coconut
2-8oz packages of cream cheese
1 stick of butter (not margarine)
2 pounds of powdered sugar
1 tbsp of pure vanilla extract
Candies to decorate
 
Bake your cake in 2 round pans and let them cool
Using a paper plate as a guide you cut the ears from one of them and use the center part that is left over for the bow tie.

Next you want to make your frosting.
Melt 1 stick of butter.  Add 1 tbsp of pure vanilla extract and 2 boxes of softened cream cheese to this.  Using a mixer blend until smooth.  Slowly add your powdered sugar and keep mixing until your frosting is nice and thick.  I used a full 2 pound bag.

Frost your cake all over with the frosting.  Next take a paper plate and cut you two shapes a little smaller than your ears.  Lay these lightly on the ears.  Cut out more to lay on top of your bow tie.
 (I forgot this part, so my bowtie is covered in coconut)
 
Once your ears and bow tie are ready, put coconut all over the cake.  Next lift off the pieces of paper plates and sprinkle sugar or other decoration in that area.  Sissy did this decorating for me.
 
 
Using licorice or any candies you have on hand, make him a face and decorate his bowtie.
 
Grab a glass of milk and enjoy!!
